Why is proof enough in mathematics but not science?

Because mathematics studies abstract logical systems.

Science studies the physical world.

Nature is not deduced from axioms.

Nature is observed.

For example:

Mathematics can prove

The angles of a Euclidean triangle equal 180°.

Science cannot prove

Water always boils at exactly 100°C.

That depends on atmospheric pressure.

It must be measured.
